Chicken Enchiladas-Foil-Packed !

Most of us love cooking but there are THOSE days when we simply feel uninspired. Continuously impressing the food critics we call our kids can sometimes leave us creatively depleted, don’t you think? Luckily this delicious Foil-Packed Chicken Enchiladas recipe will turn your Friday night into a fun family fiesta! Not only is it SUPA quick and easy to make, it has also been rated 5 stars by my family! (Makes 6 enchiladas)


You will need:

6 x sheets of Supa Mama® embossed foil (size depends on your wrap)
4 cups cooked and shredded chicken breasts
¾ cup rinsed canned black beans
¾ cup frozen sweet corn
¼ cup finely chopped white onions
1-½ cups cheddar cheese, grated and divided in two
5 ml paprika
5 ml dried chilli flakes
1 x 410g can diced tomatoes
6 large soft tortilla wraps
½ cup sour cream

To Make:

  1. Preheat the oven grill.
  2. Combine chicken, beans, corn, onions, ¾ cup cheese, paprika, chilli flakes and tomatoes.
  3. Place each tortilla wrap in the centre of my foil. (Supa Tip: Spray the foil with cooking spray.)
  4. Carefully spoon the filling into each tortilla and fold into a wrap shape.
  5. Mix the sour cream with the remaining cheese and spoon over the rolled up tortilla.
  6. Fold the foil to make 6 enclosed packets and place seam down in an ovenproof dish.
  7. Grill for 20 min. or until heated through – don’t place it too close to the grill or it will burn!
  8. Cut slits in foil to release steam before carefully opening packets.
  9. Serve your delicious chicken enchiladas with a green salad!
