Ingredients
2kg oxtail
3 tablespoons tomato paste
1 full sliced onion
3 tablespoon of BBQ spice
2 tablespoon mild curry
2 tablespoon paprika
2 tablespoon Worcestershire sauce
3 tablespoons red wine
1 cup of carrots
10 cups if water
Method:
Season your oxtail with curry powder, BBQ spice and paprika
In a pan, drizzle with olive oil then brown your oxtail when
ready, remove it from the pan and transfer it into a bowl
Deglaze the pan with the wine
Sauté the onions, chives and garlic until softened
Add all the remaining spices, stock, tomato paste as well as Worcestershire sauce and stir
Bring back the oxtail into the pan, add 3 cups of water and
continue to cook
Cook for about 2-3 hours, continue adding water until the
oxtail is tender
When the oxtail has 30 minutes to be ready, add your sliced carrots and allow them to cook through the remaining time then serve
