If you fancy yourself a bit of a kitchen fundi, but do not have sous-vide equipment at home, why not try your hand at this restaurant-quality poach chicken recipe? All you need is my cling wrap and a pot of boiling water to create this light and delicious chicken chef-d’oeuvre (that’s a fancy word for masterpiece)!
You will need:
Supa Mama® cling wrap
1 skinless chicken breast (225g)
2 Tbsp lemon juice
A couple pinches of salt
A couple pinches of a dried herbs of your choice (ideas include oregano, basil, rosemary, or thyme)
To Make:
- Trim the fat from your chicken breast and slice it lengthwise.
- In a small bowl, mix the lemon juice, salt, and herbs.
- Add the chicken pieces and coat all over with the lemon juice mixture.
- Allow the chicken pieces marinate in the lemon juice.
- Bring a pot of water to the simmer.
- Roll out a long sheet of my cling wrap (at least twice as long as the chicken breast slices).
- Place 1 chicken strip in the centre of the plastic wrap. Roll tightly into a cylinder shape, pushing out as much air as possible.
- Tie the loose ends of the plastic wrap together in a double knot. Repeat with the second chicken strip.
- Once the water has reached a high simmer, turn off the heat (keep the pot on the stove plate though) and drop the rolled-up chicken cylinders in the pot.
- Cover the pot and let the chicken steep for 15 minutes.
Done! (If your chicken is not cooked through, you can return to the water for a few more minutes.)
Supa Tip:
Snip off the tied ends of the plastic wrap, and unwrap over a bowl catching the flavoursome juices, which you can pour over the chicken if you wish!
