Delicious Veggie Frittata!

Dads, rope the kids in this Mother’s Day and spoil the special mum in your life with this delicious veggie frittata for brunch! It will only take 30 minutes to prepare and is a step up from the standard bacon and eggs! (Serves 4)

You will need:

Supa Mama ® Baking paper
6 Eggs
1/4 cups full plain yogurt
1/4 cups fresh coriander, chopped
1 cuo grated mozzarella cheese, divided
Salt and pepper
Olive oil
1/4 red onions, chopped
1 cup mushrooms, chopped
8 stems broccoli, chopped
1/2 cup cherry tomatoes, halved

To Make:

  1. reheat the oven to 220 ℃
  2. Line an oven-proof dish with my baking paper – this will ensure you can easily lift the frittata.
  3. Whisk together the eggs, yogurt, coriander, half the grated mozzarella cheese and season with salt and pepper. Set aside.
  4. Heat olive oil in a pan. Add the onions, mushrooms and broccoli and cook for 3-5 minutes until the vegetables soften. Transfer to the lined, oven-proof dish.
  5. Pour the egg mixture on top of the cooked vegetables. Place the sliced cherry tomatoes on top and add the remaining cheese.
  6. Bake uncovered until the center is only very slightly jiggly/just set (roughly 10-15 minutes). Remove from the oven, let it rest in the oven dish for 5 minutes (it will finish cooking without drying out), then slice and serve!

SUPA Tip: Serve alongside a croissant, preserves, coffee and orange juice, as well as a picked flower from the garden and a homemade card! Mom will feel like the queen that she truly is!
