Baked Salmon & Cous Cous Parcels

These Baked Salmon & Cous-Cous Parcels are the perfect meal; nutritionally dense, quick, easy & so delicious.

You can sub out the salmon for any kind of fish you would like, you may just need to adjust baking times if the fish you use takes longer or quicker to cook! 😍😍

Cook Time: 10 to 20 minutes
You will need:
  • Supa Mama® baking paper or kitchen foil
  • ½ vegetable stock cube
  • 400ml water, boiling
  • 150g couscous
  • 5 pieces sun-dried tomato, drained and sliced
  • Olives, your favourite kind, pitted and sliced *optional
  • Juice and zest of 1 lemon
  • Handful fresh parsley, roughly chopped *optional
  • 200g frozen green beans
  • 4 frozen salmon fillets
  • 2 Tbsp. virgin olive oil
  • Salt and pepper

Instructions:
  1. Preheat the oven to 200°C Fan. Cut four pieces of Supa Mama® baking paper or kitchen foil to the size an A4 piece of paper.
  2. Pour the boiling water into a bowl with the stock cube and stir until dissolved. Add the couscous, sun-dried tomatoes, olives, lemon zest, parsley (if using), a pinch of salt and pepper. Mix well, put a large plate on top and leave to stand for 3 minutes.
  3. Spoon a quarter of the couscous onto one side of each piece of foil or baking paper. Top with the green beans and place a salmon fillet on top. Squeeze gently over the lemon juice, drizzle with oil and season with black pepper. Fold the foil over the fish and fold the edges over. Repeat with the remaining three parcels. Place the parcels on a baking tray and bake for 15 minutes.
  4. Open the parcels carefully as the steam is very hot! Enjoy!
