Cooking with Minnie and Tee, Episode 1- sticky chicken

Are you tired of the same old, same old for supper? Then why not try this SUPA scrummy sticky chicken drumsticks with rice recipe? (Serves 4)

 

You will need:

1 kg chicken drumsticks, rinsed

20 g spring onion, thinly sliced

1 Tbsp toasted sesame seeds (Optional)

MARINADE (MIX TOGETHER IN A BOWL)

1/3 cup soy sauce

1/4 cup honey

3 Tbsp rice wine vinegar (normal white vinegar also an option, use 2 Tbsp)

1 Tbsp minced garlic

1 Tbsp minced ginger

1 Tbsp toasted sesame seeds

1 tsp Sunfoil Sunflower oil

A few sprinkles of ground black pepper

 

To make:

  1. Put the chicken into a large Supa Mama® freezer bag and add the marinade.
  2. Seal and vigorously shake the bag, then massage the chicken so that the marinade covers the chicken pieces well. Marinate it for at least 30 minutes in the fridge, (or ideally 4 hours but overnight works well too!)
  3. Preheat an oven at 180°C for 20 minutes.
  4. Remove the chicken from the fridge.
  5. Cut a piece of Supa Mama® Baking Paper to fit onto a baking pan or roasting tray and line up the chicken. Make sure each piece is separate – i.e. that they’re not stacked up on top of each other.
  6. Place the tray into the oven and bake it at 180°C for 12 minutes.
  7. Take the tray out and turn the chicken over, then place it back into the oven. Bake it a further 12 minutes, or until the chicken is fully cooked.
  8. Garnish with sesame seeds and spring onion.
  9. Serve with ALLSOME Rice.

 

Notes
*1 Tbsp = 15ml, 1 cup = 250ml

 

SUPA Time-Saver Tips:

  • Marinate the sticky chicken drumsticks overnight in the fridge for added flavour.
  • Prepare and refrigerate (overnight) your ALLSOME Rice or freeze it (flattened in a Supa Mama® freezer bag) for up to 3 months. (To freeze place in a freezer bag. Flatten for easy thawing. To thaw: Thaw in the fridge overnight. To cook: Heat in a saucepan over medium high heat, stirring occasionally, until heated through.)
