Love healthy, eye-catching dinners but loathe washing dishes? My “Italian Chicken Parcels” are SUPA simple, SUPA attractive, SUPA delizioso, but with very little cleaning up after!
(Serves 4)
To make::
4 (20x20cm) pieces Supa Mama ® foil
4 x chicken breast fillets, skinless and boneless
200g cherry tomatoes
4 heaped tsp basil pesto
4 x handfuls fresh baby spinach, washed
1 x ball mozzarella cheese, diced
Handful fresh basil leaves
Ground black pepper to taste
What you will need:
- Preheat the oven to 170 ℃ for fan-assisted ovens or 190 ℃ for conventional ovens
- Place the four pieces of foil (non-embossed side up) onto a baking sheet
- Place a handful of spinach onto each piece of foil, then add a chicken breast.
- Spread a teaspoonful of pesto over each breast, and divide the cherry tomatoes between the parcels
- Fold each piece of foil into a loose parcel, scrunching the ends together, and allow plenty of room for the steam to cook the ingredients.
- Place the foil parcels onto a baking tray and cook in the oven for 20 minutes.
- After 20 minutes, carefully open the parcels slightly (beware of hot steam) and check if almost cooked.
- Scatter over the mozzarella and return to the oven for a further 5 – 10 minutes, leaving the parcels open until the Italian chicken is thoroughly cooked and the cheese is melted.
- Remove from the oven and scatter over the fresh basil leaves and add a little black pepper, then serve in my beautifully-embossed foil! Not only is it pretty, it will also keep the food warm for longer!
